On the 3rd Day of Christmas my true love gave to me… Vegan Light Spiced Fruit Cakes

These moist sponges give you that hint of Christmas with a special hug for your stomach


170g Gluten free flour
100g Dark brown sugar
70g white sugar (for a richer flavour switch the white sugar for brown sugar)
170g Dairy free spread
60g apple sauce (or 3 eggs)
170g mixed fruit
2 tbs milk substitute
Corn flour for dusting the fruit

Preheat the oven to 150 degrees/ gas mark 4
Mix the apple sauce, spread and sugar 
add the flour and mix really well add the milk and stir

Add a bit of cornflour to the dried fruit and ensure it’s all coated this will help stop it sinking 

Then add to the cake mix

Spoon into cake cases and bake for 20 minutes, when checking if cooked price twice in two places to see if it comes without batter on it if not bake longer in 10 minute increments 

Moist and scrummy
