These suets are soft and fluffy inside with a gorgeous crisp shell whilst being free from all top 14 allergens and have options to be vegan too.
150g Gluten free flour
50g Cold Lard (or a vegan equivilent such as Trex)
A cup of water
Preheat the oven to 200 degrees or gas mark 6
Grate the fat into a bowl (This is easier if it’s very cold but not frozen) and add in the flour and season as desired stir so the fat is distributed amongst the flour if there is too many lumps work it with your fingers.
Add water bit at a time so you have a wet mix but not too wet.
Mix in and leave in the fridge for 5 minutes
If it’s too dry you can add a bit more water and leave again
Then spoon into a pan and cook for 20 minutes or until golden brown
