This recipe is fantastic because it produces moist cakes and the quantity is easily adjustable

4oz Gluten Free self raising flour
4oz Dairy Free spread
1 medium banana
1tsp Vanilla extract
1tbs Milk substitute
Preheat your oven to 190C, gas 5
In one bowl beat your banana until it’s almost liquid, this is essential to stop it being too stodgy
In a second bowl mix your sugar, spread and vanilla till it’s well mixed.
Add the banana mixture and beat
Mix in the flour, this needs mixing a bit more than you would with a normal flour just to activate the binding ingredient.
Add in the milk substitute, this is very important because without the added liquid the mixture will be dry and crumbly.
You’ll want to bake small cupcakes for 15 minutes and a large cake for around 25 minutes
DO NOT OPEN THE OVEN BEFORE THIS OR THEY WILL SINK
Pop a skewer in the middle and if it comes out clean they are ready, if not the just pop back in for 5 minute increments
