Foolproof cupcakes

These gluten and dairy free cupcakes turn out perfect every time, though they do contain egg (Please see our Easy Vegan cupcakes for an egg free recipe)
These are suitable for the egg ladder


4oz gluten free self raising flour
4oz sugar
4oz dairy free spread
2 eggs
1tsp vanilla 
1 tbs milk substitute (Or water) 

Preheat your oven to 190C, gas 5

Mix the spread, vanilla and sugar in a bowl
Add the eggs and then the flour and mix well
Stir more than you would  a normal cake to activate the binding agent. 
Add your liquid, this is important to stop the cake being dry

You’ll want to bake small cupcakes for 15 minutes and a large cake for around 25 minutes DO NOT OPEN THE OVEN BEFORE THIS OR THEY WILL SINK Pop a skewer in the middle and if it comes out clean they are ready, if not the just pop back in for 5 minute increments
