Christmas Dairy free Egg free Egg/Milk Ladder Gluten free No top 14 allergens Nut Free Sweet Vegan Vegetarian

On the 1st day of Christmas my true love gave to me… Vegan Gingerbread Cookies

These gingerbread cookies are vegan, and can be free of all top 14 allergens and make a delicious start to the Christmas season


50g apple sauce *
230g Self raising gluten free flour mix **
160 g Dark Brown sugar (If sulphate free use white sugar)
55 g Butter alternative or sunflower oil
80 g Golden Syrup 
1 tbsp ground ginger
1 tsp ground cinnamon
Cornflour (or any flour) for rolling

*Apple sauce can be switched for an egg if not avoiding egg or 1/2 a mashed banana if you can not have apples

** If you can not use a shop bought self raising mix any blend will work just ensure you add 2 tsp of baking powder and 1/2 a tsp of xanthem gum

Preheat oven to 180ÂșC Gas Mark 4
On a cookie tray pre-grease a baking sheet

Mix sugar, spread, applesauce and syrup
Add the flour, ginger and cinnamon 
Begin mixing with a normal whisk and then with a dough hook… The mixture should be coming clean from the sides of the bowl, if it’s still quite wet add little bits of flour and keep mixing 

Leave to rest for 5 minutes and mix again, if the mix is too dry you can add a tbs of water mix in and let sit again 

On a clean dry surface sprinkle corn flour and roll out your mix 
Rolling out quite thick can be best as this will make them less delicate

If you’re having issues with the mix sticking you can put down grease proof paper and roll onto that it, if still sticking you can use the paper straight onto your cookie sheet

Cut out shapes (We like baubles) and if you want poke a hole with a skewer to be able to add ribbon when cooled and bake for 10 – 15 minutes (Until golden brown)

Remove carefully from the sheet and leave to cool… when cooled you can decorate your gingerbread as you wish
